- Po’ Boys
A po’ boy is a traditional sandwich from NOLA with options including soft shell crab, catfish, crawfish, Louisiana hot sausage, fried chicken breast, and roast beef served on classic (and deliciously crusty) French bread. One of the key ingredients when making po’ boys is the remoulade, a Cajun version of classic French sauce. Po’ boys are known as “street food”, so they’re easy to enjoy while standing in the parade crowd or at your Mardi party!
Gumbo is a thick Louisiana stew made of stock, meat or shellfish, celery, bell peppers, and onions, and is usually thickened with okra.

King cake is a must have for any Mardi Gras party. In Louisiana, King cake is a ring of twisted cinnamon dough topped with icing or sugar, and is colored green, purple and gold. King cakes may also be filled with other goodies like rich cream cheese, praline, cinnamon, or strawberry. Traditionally, a little plastic baby is baked into the cake, and whoever gets that piece wins a prize.
There’s a tasty storm brewing! This drinks combines light and
dark rum, passionfruit and lime juices over ice, and is a Mardi Gras favorite. Serve in a hurricane glass with some maraschino cherries as a garnish and toast to the spirit of Mardi Gras!

Another rum drink, the Creolo mixes mint, agave, spiced rum, and club soda for a refreshing Mardi Gras treat. This drink can be prepared and served just like a mojito, so get your bartender on and crank out this imaginative cocktail for your party.
The Sazerac originated in New Orleans in 1838 and is the Big Easy’s answer to the Manhattan. A Sazerac uses cognac or rye whiskey, paired with absinthe, a sugar cube and bitters. Get ready for a wild night when you mix up this concoction!
